The state of Rajasthan is a colorful state with royal architecture, beautiful palaces and ethnic approach. Cuisine of Rajasthan is somewhat influenced by its geographical location. As, we know that the land of the state suffers from the scarcity of water so, most of the food items are prepared with milk and buttermilk. The Rajasthani food is a combination of Dalbati and Churma. The use of Gram flour makes some of the food items like Gatte Ki Sabzi, Pakodi, and Mangodi very delicious. Whereas, the major ingredients corn and bajra are used to prepare Rotis and Khichdi.

For Eg: Jodhpur’s main item is Mawa Kachori, Rasagulla is the specialty of Bikaner region and Pushkar’s main item is Malpoas. The tourists who come to the state eat breads in the form of besan ki missi and lacchedar paratha.
From various vegetarian food items mentioned above, some Rajasthani Delicacies are majorly used in the preparation of meat such as cinnamon, garlic, turmeric and cardamom. Rajasthani’s are very spicy people so, you will always find them eating dinner with chutneys. Spicy chutneys are prepared with the use of coriander, garlic, turmeric and mint.
