Kerala Syrian Christian Cuisine -Kerala
The most favored dish of the Kerala Syrian Christians is the ‘stew’. The Syrian Christian Food is little different from regular Kerala Hindu Sadhay due to the addition of non vegetarian elements to it. Stew is made by bringing chicken, onions and potatoes simmered gently in a creamy white sauce flavored with black pepper, cinnamon, cloves, green chilies, lime juice, shallots and coconut milk. These appetizing stews are also prepared with chicken, lamb or duck.
Some other popular delicacies of Syrian Christian Cuisine include meat thoran, fiery vindaloos, sardine, duck curries and Meen Molee etc. The stew is generally eaten with ‘Appam’ which is a rice flour pancake with soft, thick white spongy centers and thin, golden, crisp lace-like edges. Apart from these the other well known preparations of Syrian Christian includes beef cutlets with sallas , Peera Pattichathu , Meen vevichathu and erachi orlarthiathu . Wine is also an essential part of Kerala Syrian Christian Cuisines. The most interesting feature of these cuisines is the liberal use of essential oils along with aromatic spices and coconut milk.
It is very difficult to draw a boundary of cuisines of each of the communities as they are now become an integral part of Kerala. It is the secular and integrative traditions that bound communities to share and adopt ideas from each other and this is true to the cuisines of the region as well.
